Ingredients
2 Eggplants
2 Chopped garlic cloves
2 tablespoons of Chopped parsley
4 tablespoons of Tahini sauce
½ tablespoon of Paprika
5 milliliters of Lemon juice
1 pinch of Salt
Olive oil
Preparation
Step 1 : Cut the eggplants in half and brush them with olive oil using a kitchen brush, then sprinkle with a pinch of salt.
Step 2 : Place them cut side down on a baking sheet lined with parchment paper and bake at 200°C (392°F) for about 30 minutes.
Step 3 : Once cooked, remove the pulp from the eggplants, place it in a colander, and press with a spoon to drain well.
Step 4 : Put the eggplant pulp into a blender along with chopped garlic, tahini, lemon juice, olive oil, and salt to taste.
Step 5 : Blend until smooth and homogeneous pâté is achieved.
Step 6 : Transfer to a container and refrigerate.
Step 7 : When ready to serve, sprinkle chopped parsley on top and drizzle with olive oil and paprika over the pâté.
