Batata harra

In a Middle Eastern preparation, sweet potatoes are cut into chunks and cooked in a pot with salt.

Then, they are carefully fried and mixed with onion, red pepper, garlic, spicy chili, and cilantro.

Ingredients

1 kilogram of Potatoes

½ Lemon

½ Onion

2 Garlic

½ Red pepper

1 Spicy chili

100 grams of Cilantro

Olive oil

Frying oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Peel the potatoes, wash them, and cut into medium-sized pieces.

Step 2 : Add to a pot with water and a teaspoon of salt to boil slightly.

Step 3 : Once partially cooked, remove and set aside.

Step 4 : In a skillet with hot oil, carefully fry the potatoes to keep their shape.

Step 5 : Proceed to finely chop half an onion, half a red pepper, 2 garlic cloves, 1 spicy chili, and 100 grams of cilantro.

Step 6 : Sauté these ingredients over low heat with olive oil for a few minutes.

Step 7 : Then add the fried potatoes and mix everything.

Step 8 : Add the juice of half a lemon to the potatoes once all flavors have integrated.

Step 9 : Finally, serve hot.
