Briouats are a delicious dish that combines crispy filo pastry with a creamy filling of feta and mozzarella cheese, enriched with garlic and pepper. Ideal as an appetizer, these bites are made with layers of filo, filled with cheese, and baked until golden.
You can make them in a conventional oven and also bake them partially to freeze and enjoy later. They are easy to prepare and perfect for sharing on any occasion.
Briouats
Ingredients
1 Pack of filo dough
8 ounces of Feta cheese
8 ounces of Mozzarella cheese
2 Beaten eggs
1 teaspoon of Crushed garlic
½ teaspoon of Pepper
Butter
1 Egg yolk
Preparation
Step 1 : First, it is important to let the filo dough fully defrost before starting with the preparation.
Step 2 : Then, preheat the oven to 375°F (190°C).
Step 3 : In a large bowl, mix the feta cheese, mozzarella, beaten eggs, crushed garlic, and pepper until you get a smooth and well-integrated paste.
Step 4 : Cut the filo dough in half lengthwise, creating two strips of equal size.
Step 5 : To assemble the briouats, take a sheet of filo and brush it with melted butter.
Step 6 : Place another sheet on top, and repeat the process to create a layer of three sheets in total.
Step 7 : With this layered sheet, place a spoonful of filling on the bottom edge and fold the sides inward.
Step 8 : Then, roll it up into a cylinder, ensuring the ends are well sealed with butter so they don’t open during baking.
Step 9 : Repeat this process with the remaining sheets and filling to make all the briouats you wish.
Step 10 : To make presentation easier, place them on a baking sheet and brush the top of each with beaten egg yolk for a nice golden color.
Step 11 : Bake the briouats for about 15 to 20 minutes, or until golden and crispy.
Step 12 : For added convenience, these can be baked partially, cooled, and stored in the freezer.
Step 13 : When ready to serve, just bake them again until crispy and golden to regain their perfect texture.
