3 Pita bread
1 can of Canned chickpeas
250 milliliters of Greek yogurt
2 tablespoons of Tahini
2 Lemons
3 Garlic cloves
25 grams of Pine nuts
1 teaspoon of Ground cumin
1 pinch of Salt
1 pinch of Pepper
Chopped parsley
Preparation
Step 1 : Place the chickpeas in a saucepan along with the canning liquid and a bit of water.
Step 2 : Then, add the cumin, grated garlic, salt, and pepper.
Step 3 : Cook the mixture for about 15 minutes until the chickpeas are dry.
Step 4 : Next, add the chopped parsley and set the preparation aside.
Step 5 : Meanwhile, cut the pita breads in half lengthwise, then into triangles.
Step 6 : Place these triangles on a tray and toast them in the oven under the grill for about 6 to 7 minutes, until golden and crispy.
Step 7 : To prepare the sauce, mix the yogurt with tahini, chopped or grated garlic, lemon juice, and a pinch of salt.
Step 8 : Water can be added to achieve a creamy and smooth texture, adjusting as necessary.
Step 9 : To assemble the dish, place the pita triangles at the bottom of a plate.
Step 10 : On top, spread a layer of yogurt, followed by a layer of cooked chickpeas.
Step 11 : Repeat the process to create several layers.
Step 12 : Finally, sprinkle with chopped parsley, add toasted pine nuts, and drizzle with a splash of extra virgin olive oil.
