Zaalouk is a traditional dish from Morocco that combines eggplants and tomatoes in a flavorful salad or dip. It is made by roasting the eggplants to enhance their smoky aroma, although it can also be baked in the oven.
The mixture is seasoned with garlic, parsley, cilantro, spices such as paprika and cumin, and cooked until it reaches a creamy and well-integrated texture. This versatile dish can be served hot, cold, or at room temperature, accompanied by Moroccan bread (khobz) for a delicious and nutritious lunch or appetizer.

Moroccan Zaalouk
Ingredients
2 Eggplants
2 Tomatoes
6 Chopped garlic cloves
2 tablespoons of Chopped parsley
2 tablespoons of Chopped cilantro
1 teaspoon of Salt
2 teaspoons of Paprika
2 teaspoons of Cumin
4 tablespoons of Olive oil
Cayenne
Lemon juice
Chopped cilantro
Preparation
Step 1 : Cut the eggplants in half lengthwise and place them on a baking sheet lined with aluminum foil.
Step 2 : Then, bake in the oven for about 20 to 25 minutes, or until the skin is charred and the flesh is soft.
Step 3 : Meanwhile, peel the tomatoes, remove the seeds, and chop them into small pieces.
Step 4 : Place these in a skillet with olive oil, chopped garlic, parsley, cilantro, and spices.
Step 5 : Cook the mixture over medium heat, stirring occasionally, until it forms a thick sauce.
Step 6 : Once the eggplants are ready, let them cool slightly.
Step 7 : Then, peel off the skin and scoop out the flesh with a spoon, discarding the skins.
Step 8 : Add the eggplant flesh to the tomato sauce and mix well to combine all flavors.
Step 9 : It is recommended to mash the larger pieces with a fork to achieve a smoother texture.
Step 10 : Adjust the seasoning to taste, and if desired, add a splash of lemon juice to enhance the flavors.
Step 11 : Finally, cook the mixture for another 5 to 10 minutes, allowing the flavors to meld further.
Step 12 : Serve hot, cold, or at room temperature.
Step 13 : For garnish, sprinkle with fresh parsley or cilantro, and add a drizzle of olive oil if desired.
