Ingredients

150 grams of Rice vermicelli noodles

2 Eggs

2 tablespoons of Saffron

Rose water

4 Cardamom capsules

2 tablespoons of Sugar

Vegetable oil

1 pinch of Salt

Preparation

Step 1 : First, open the cardamom capsules and extract the seeds, which are then crushed in a mortar until obtaining an aromatic powder.

Step 2 : In a large pot, bring water to a boil with a pinch of salt and two tablespoons of sugar.

Step 3 : Once the water reaches a boil, add the vermicelli noodles and cook until tender.

Step 4 : Then, drain the noodles, reserving a small amount of cooking water.

Step 5 : In a heated pan with vegetable oil, place the cooked noodles.

Step 6 : Add saffron, the ground cardamom, and a few drops of rose water, mixing gently to combine the flavors.

Step 7 : Meanwhile, in another pan, beat the eggs with a pinch of salt and cook until forming a thin omelette.

Step 8 : Remove the omelette, cut into four equal parts, and set aside.

Step 9 : Finally, distribute the noodles on the plates and place the omelette portions over them.

Step 10 : For a decorative and aromatic touch, you can drizzle additional rose water or sprinkle more ground cardamom, if desired.
