Ingredients

5 Eggplants

3 Small onions

500 grams of Ground lamb meat

1 tablespoon of Baharat

1 cup of Tomato concentrate or paste

2 tablespoons of Butter

Olive oil

1 pinch of Salt

Preparation

Step 1 : To prepare this delicious dish, start by slicing the onions into thin rings.

Step 2 : Next, cut the eggplants in half and scoop out their centers with a spoon.

Step 3 : It's important to soak the eggplants in water and salt for 30 minutes to remove bitterness.

Step 4 : In a pot, sauté the onions with a little olive oil until they are golden.

Step 5 : Then, add the seasoned minced meat with baharat and salt to taste, stirring well to combine.

Step 6 : Add the tomato paste and cook for 5 minutes.

Step 7 : Meanwhile, remove the eggplants from the water and let them drain.

Step 8 : Lightly brown them in an oiled skillet over low heat for a couple of minutes.

Step 9 : Next, fill the eggplants with the meat mixture.

Step 10 : Place the stuffed eggplants in a preheated oven at 180°C for about 20 minutes, until thoroughly cooked.

Step 11 : Once ready, remove from the oven and they are ready to serve.
