Ingredients

3 Chicken breasts

1 Onion

1 Carrot

3 Cardamom pods

7 Black peppercorns

3 Bay leaves

1 Cinnamon stick

1 ½ liter of Water

1 tablespoon of Salt

2 Chopped onions

2 cups of Freekeh

½ teaspoon of Black pepper

¼ teaspoon of Turmeric

¼ teaspoon of 7 spices blend

½ teaspoon of Ground cardamom

1 pinch of Salt

1 teaspoon of Butter

Preparation

Step 1 : In a skillet with a little oil, quickly fry the chicken pieces over high heat until they turn golden.

Step 2 : Once browned, transfer the chicken to a large pot and add the onion, carrot, spices, bay leaves, and salt, covering all ingredients with hot water.

Step 3 : Bring the pot to a boil and then simmer over medium heat for about 45 minutes until the chicken is cooked through and flavorful.

Step 4 : After this time, remove the chicken from the pot, shred it, and set aside, while passing the broth through a fine sieve to remove residues and reserve it.

Step 5 : Meanwhile, thoroughly rinse the freekeh in several stages, rubbing with your fingers to remove any residue until the water runs clear.

Step 6 : Then, soak it in warm water for about 30 minutes to soften.

Step 7 : In another pot, heat some oil and sauté the chopped onions until golden and fragrant.

Step 8 : Next, add the drained freekeh and spices, cooking everything together for about 5 minutes so the grain soaks up the flavors.

Step 9 : Then, add the clear broth and bring to a boil.

Step 10 : Cook for about 20 minutes, and in the last 10 minutes, add the shredded chicken so it can fully incorporate with the rest of the ingredients.

Step 11 : Taste the broth and adjust the salt or add more water if necessary.

Step 12 : Just before serving, add the butter, stirring well to give the dish a smooth and aromatic finishing touch.
