Bissara is a comforting Moroccan soup made from dried fava beans, garlic, and spices.
Highly valued in winter, it is served hot with fresh bread, olive oil, and a touch of lemon. It is an affordable recipe, full of plant-based proteins and tradition, ideal for light and nutritious breakfasts or dinners.
Moroccan Bissara
Ingredients
250 grams of Dried fava beans
2 Garlic cloves
1 teaspoon of Ground cumin
1 teaspoon of Paprika
Ground chili
1 pinch of Salt
4 tablespoons of Olive oil
Lemon juice
1 liter of Water
Preparation
Step 1 : The fava beans are carefully rinsed and soaked in water overnight, approximately 6 to 8 hours.
Step 2 : The next day, they are drained and placed in a large pot with fresh water.
Step 3 : Add the peeled garlic cloves and a pinch of salt before bringing to a boil.
Step 4 : Once the water boils, reduce the heat and cook the beans on low heat for about 40 to 50 minutes, until very tender.
Step 5 : After cooking, remove from heat and blend the beans with an immersion blender or pass through a sieve.
Step 6 : If the mixture is too thick, you can add a little hot water to achieve a smooth and homogeneous cream.
Step 7 : Then, return the soup to the heat and add cumin, paprika, and ground chili.
Step 8 : Stir well to incorporate all flavors and let it cook for a few more minutes, allowing the soup to develop its flavor profile.
Step 9 : Finally, serve the soup in bowls, garnished with a drizzle of raw olive oil and a few drops of lemon juice.
Step 10 : To accompany it, it is recommended to serve hot or crispy Moroccan bread, which perfectly complements this delicious dish.
