Moroccan Harira
Ingredients
300 grams of Veal for soups
50 grams of Cooked lentils
70 grams of Noodles
100 grams of Cooked chickpeas
800 milliliters of Chicken broth
400 grams of Concentrated natural tomato
2 Garlic cloves
1 Onion
2 Carrots
2 Celery
50 grams of Parsley
50 grams of Cilantro
1 tablespoon of Ginger
1 tablespoon of Black pepper
1 tablespoon of Turmeric
½ tablespoon of Cinnamon
½ tablespoon of Baking soda
Olive oil
1 pinch of Salt
Preparation
Step 1 : To start, wash the meat and cut it into small pieces.
Step 2 : Next, finely chop the onion, carrots, garlic, parsley, and cilantro.
Step 3 : In a pot, preferably a pressure cooker, add some olive oil and sauté the onion and celery.
Step 4 : Then, add the chopped meat, carrots, parsley, cilantro, and salt to taste, mixing all ingredients evenly.
Step 5 : Next, incorporate the spices, such as ginger, black pepper, turmeric, and cinnamon, making sure to mix well to enhance the flavors.
Step 6 : Subsequently, add the chicken broth and tomato concentrate, and let the mixture cook covered for about 35 minutes.
Step 7 : After this time, uncover the pot and add the lentils, noodles, and chickpeas, allowing them to cook for an additional 5 to 10 minutes.
