Shishbarak

Ingredients

400 grams of Wheat flour

1 cup of Milk

1 tablespoon of Sugar

200 grams of Ground lamb

1 Small chopped onion

1 tablespoon of Pepper

500 grams of Natural yogurt

2 Beaten eggs

5 grams of Mint

Olive oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare the pastries, start by placing wheat flour, milk, sugar, and a pinch of salt in a bowl.

Step 2 : Knead the mixture until you obtain a uniform dough and let it rest for 1 or 2 hours.

Step 3 : While the dough rests, proceed to prepare the filling.

Step 4 : Sauté the onion in a skillet until soft, then add the ground lamb and season with pepper and salt to taste, cooking slowly until fully cooked.

Step 5 : After the dough has rested, place it on a flat surface and roll it out with a rolling pin.

Step 6 : Using a mold, cut small circles, place a bit of the seasoned lamb filling inside, then fold in half and seal the edges.

Step 7 : Repeat this process with all the dough circles and place them on a floured tray.

Step 8 : In a separate container, mix yogurt with beaten eggs and pour into a pot over low heat, stirring constantly.

Step 9 : When the mixture boils, add 2 cups of water, mint, and a pinch of salt, continue cooking and add the filled pastries.

Step 10 : Cook for 15 to 20 minutes, stirring occasionally with a spoon.

Step 11 : Once ready, remove from heat and let rest for 10 minutes before serving.
